A Michelin-Star Chef Explains His Choice

Why Michelin-Star Chef Anders Krogh Cooks on Solid Titanium, and Will Not Put a Coated Pan in His Kitchen

After 18 years in Nordic kitchens, Anders Krogh has cooked on every pan made. Cast iron, stainless, ceramic, copper, every coating on the market. Today he uses one pan, and one only. Here is why.

01 — It Was Never the Chemical. It Was the Coating.

Every coated pan I have owned failed the same way. It scratches, it blisters, and eventually it is in the food. It makes no difference what the coating is made of or what the box calls it. A coating is a layer applied on top of a pan, and every layer applied on top of a pan comes off. Titanium has no layer. There is nothing on it that can fail.

02 — PFAS-Free, Because There Was Never Any PFAS to Remove

The forever chemicals sit inside most of the cookware sold to us as safe. They build up in the body and they do not leave. Miljøstyrelsen has been publishing guidance on them for years, and the EU is moving to restrict them outright. I will not cook with them, in my restaurant or at home. Stonvale is solid titanium. No PFAS, no PTFE, no PFOA, and nothing hidden underneath.

03 — Non-Stick Without a Single Chemical

The pan is hammered by hand, and the hammering work-hardens the surface into a fine texture that lifts food off the metal. That is the entire mechanism. Heat it for sixty seconds, add a little fat, and leave the food alone. Eggs slide. Fish lifts away whole. No chemical layer is doing the work for you. Just the metal, the heat, and the food.

04 — Your Pan Is Already Wearing Out. You Just Cannot See It Yet.

Flaking is the end of the process, not the beginning. A coating degrades a little every time it is heated, scraped and washed, long before anything shows. The average non-stick pan lasts one to three years. Titanium does not wear, because there is nothing to wear away. Stonvale's 25-year warranty covers the whole pan, because there is no coating to leave out of it.

05 — One Pan for Everything, Induction Included

Gas, induction, oven and grill. It goes straight from the hob into the oven, takes metal utensils without a scratch, and is around 45% lighter than steel. Almost every Danish kitchen I walk into now runs induction, and this pan does not care which hob it lands on. In a working kitchen you need a pan that does not flinch. At home, with a family to feed, that matters more.

06 — It is honest. That is why I put my name on this deal.

There is nothing hidden under the surface. No coating, no chemical, no compromise. Stonvale was built by two young Europeans who went looking for an honest pan, could not find one, and had it made with nothing on it. When they asked me to back an offer, this was the only kind of pan I was willing to stand behind. It is what I reach for when I cook for my own family. I think most people, if they knew what was in the alternatives, would feel the same. — Anders Krogh,

Pure titanium. No coating. No PFAS. No compromise.

This hand-hammered titanium frying pan is naturally non-stick. No PFAS, no PTFE, no chemical coating. The hammered surface releases food on its own, takes metal utensils without a scratch, and goes straight from induction to oven. Around 45% lighter than steel, and backed for 25 years.

Every pan is shaped by hand, so the hammering pattern is never quite the same twice. Pure titanium does not react with what you cook, so there is no metallic taste and no flavour carried from one dish into the next.

There is nothing to scratch, chip or replace. No coating means no expiry date.

One pan. For life.

Care Instructions +

Heat the pan on medium for 60 seconds before anything goes in. Add a little oil or butter and let it shimmer. Put the food in and then leave it alone. When it is ready it releases on its own.

Hand wash with warm soapy water. Dishwasher safe, but hand washing is recommended and keeps the hammered finish looking its best. Use medium heat for best results.
